How much is a Hoboken Farms sandwich worth?

Well today through Saturday, that's up to you.

The Hoboken Farms Sandwich Shop, set to officially open May 18, will be running the 1,000 Sandwich Giveaway during which customers can name their own price for everything on the menu. All proceeds will be donated to the Community Foodbank of NJ. All donations up to $5,000 will be matched by Provident Bank.

"Kathleen (DiChiara) is really a little bit of a spiritual inspiration to me," owner Brad Finkel said. "This is where I want the money to go."

But Finkel said this specific event fits in with his and Hoboken Farms' philosopy overall, from using New Jersey companies such as Joe Chips of Montclair to supply potato chips and iced tea to offering menu items featuring produce from fellow Farmers Market vendors such as , Alstede Farm and .

"We feed you, you feed us, we feed each other," Finkel said.

Many of the ingredients being used in the 1,000 sandwich giveaway fundraiser have also been donated by the vendors to help maximize the contribution to the food bank.

"It has blown me away how much people have embraced the idea, especially in these times," Finkel said.

Another key element to the Hoboken Farms philosopy is a wide selection of gluten free menu items. Finkel's son Will was diagnosed with a serious allergy to gluten at the age of one and has been gluten free ever since.

In fact, Finkel designed the shop to be the most gluten-free store in the state with a designated area for all gluten-free food preparation, a fail-safe computer system that requires employees to ask whether or not an order is gluten free or conventional and a gluten-free label that will go on very product which will be signed by employees after inspection to ensure the sandwich is gluten free.

"If my wife and my son can eat here, anyone can," he said.

The Hoboken Farms Sandwich Shop menu features cold sandwiches such as the Caputo Worldwide named for Jimmy Caputo of the Department of Public Works which is prosciutto, salami, ham, fresh mozeralla, and asiago cheese on a baguette with romaine leaf lettuce, tomato, a touch of onion drizzled with their homemade dressing made with house olive oil, select red wine vinegar, and top secret spices; warm sandwiches ranging from chicken parm made with their famous big red mariana sauce which was recently named one of five best sauces in the country by The Wall Street Journal, and braised chicken thighs to the Elvis on the Wall: butter and mashed bananas pressed and hot on a soft cuban roll.

For the duration of the 1,000 sandwich giveway, the shop will be open from 11 a.m. to 4 p.m. but after the opening on May 18 will open for breakfast at 6:45 a.m. and will close at 3:30 p.m. Hoboken Farms will deliver to Summit, New Providence, Berkeley Heights, and Chatham.
